What is a Saccharin?
Saccharin (C7H5NO3S) is an artificial sweetener discovered in 1879. It has an intensely sweet taste, about 300 to 500 times sweeter than sucrose (table sugar). Saccharin contains virtually no calories, making it a popular sweetener for people with diabetes or those on calorie-restricted diets. It is commonly used in food and beverages, especially in low-calorie products and diet sodas. However, in the past, animal studies suggested that saccharin might be carcinogenic, leading to temporary restrictions on its use. Subsequent research has shown that the risk of cancer to humans is extremely low, and saccharin is now widely used in many countries.
Due to its high heat resistance and stability, saccharin is also used in products that are subject to heating, such as baked goods and other processed foods.
