What is a Sorbitan Fatty Acid Ester?
Sorbitan fatty acid esters are a group of non-ionic surfactants formed by the esterification of sorbitan (a dehydrated form of sorbitol) with fatty acids. They function primarily as emulsifiers, helping to blend immiscible substances like oil and water into stable mixtures. These compounds are widely used in food products, cosmetics, pharmaceuticals, and industrial applications. In food, they are often labeled with E-numbers (E491 to E495). Common types include sorbitan monostearate (SPAN 60) and sorbitan monolaurate (SPAN 20), which are particularly effective in stabilizing water-in-oil (W/O) emulsions due to their lipophilic nature. Sorbitan esters are considered relatively safe, biodegradable, and are frequently used in formulations that emphasize natural ingredients.
