What is a Sorbic acid (C₆H₈O₂) ?
Sorbic acid (C₆H₈O₂) is a straight-chain unsaturated fatty acid commonly used as a preservative to inhibit the growth of mold, yeast, and fungi in food products. It is designated as E200 in food additive labeling. Although it naturally occurs in small quantities in rowan berries, commercial sorbic acid is typically synthesized. It is most effective in acidic environments (pH below 5) and is widely used in baked goods, cheese, beverages, pickles, and sweets. Sorbic acid works by inhibiting the enzymatic activity of microorganisms and is considered relatively safe, as it is readily metabolized by the human body. A related compound, potassium sorbate (E202), is also frequently used in similar applications.
