What is a Hexenal?
Hexenal is an unsaturated aldehyde with the molecular formula C₆H₁₀O. It comes in several isomeric forms, such as cis-3-hexenal and trans-2-hexenal, which differ in the position and geometry of the double bond. Cis-3-hexenal is especially notable for its fresh, grassy, green aroma, earning it the nickname “green note” in the fragrance and flavor industry. This compound is naturally produced by plants when they are damaged, contributing to the characteristic smell of freshly cut grass or green vegetables. Because of this, it is widely used in perfumery and food flavoring to impart a fresh and natural scent. It is also being studied for agricultural applications as an insect repellent or pheromone modulator.
Despite its pleasant aroma, hexenal is chemically unstable and prone to oxidation, requiring careful handling and storage. It is considered to have low toxicity, but exposure to high concentrations via inhalation or skin contact should be avoided.
